People around me eat non-vegetarian food, and when I choose to eat vegetarian, they mock it, calling it “grass” and not considering it real food. Why is it that in India, people are increasingly shifting towards non-vegetarian diets, while globally, many are embracing veganism🤷‍♂️?

The general worldwide trend is towards vegetarianism. But there are always people who like to appear cool and need social approval. They generally do things that are trending. But if you see it carefully then you will recognize that those who seek comfort in numbers are basically weak willed individuals whose choices are driven by the current mass thinking. You should be happy and proud that you do not belong to this herd mentality and have a mind of your own. 

As to ghaas phoos you can coin your own phrase for non vegetarians and take it all in good humour. Learn to laugh at all this and stand firm on your choices. It is a great quality.
